The Lakeshore Culinary Institute is Lakeshore Technical College's teaching and dining facility set in Sheboygan's Riverfront Neighborhood just south of downtown. The institute brings together traditional fine dining and Culinary Arts instruction. Students begin the program each August and January and become part of a smaller class size of 12 students that results in more kitchen time and more individualized instruction from the chefs. The state-of- the-art Manitowoc Company Culinary Kitchen offers students the most advanced tools in the industry. Students use the restaurant, open several nights and days each week while school is in session, as their practicum courses.

       

The Lakeshore Culinary Institute also offers home chefs and hospitality professionals the opportunity to take home new culinary skills and stay on top of industry training. The Vollrath Company Demonstration Center provides the ideal setting for these classes and seminars.

Nathan Meinnert

Bistro 712 Restaurant Manager

Nathan has nearly 20 years of experience managing restaurants and banquet facilities at the American Club, Hilton Milwaukee City Center, and the Pfister Hotel. As our restaurant manager, Nathan instructs students in the Wine and Beverage, Dining Room Service, and ServSafe Sanitation courses. Nathan orchestrates all of your events at Bistro 712. His years of experience managing kitchens in major hotel chains and delivering exceptional customer experiences will make your next visit to Bistro 712 memorable and enjoyable.

Chef William Gottsacker
Holding a bachelor's degree in business and graduating from the Culinary Institute of America, Chef Bill's natural teaching style is a perfect fit for the Lakeshore Culinary Institute's multidimensional programming which includes the Culinary Arts Associate Degree, seminars, certificates, and an international exchange program.

With a master's degree in education, and 20 years of experience in top-notch kitchens across the U.S., Chef Kevin is a gourmet instructor in the Lakeshore Culinary Institute's kitchen.
Will LammersChef Will Lammers
Locally raised in the Sheboygan area, Chef Will is a graduate of Lakeshore Technical College; earning associate's degrees in hospitality management and culinary arts. Chef Will started his career at The Osthoff Resort in Elkhart Lake, gaining experience in banquet production and contemporary French cuisine. His passion for artisan bread lead him to the bakery at The American Club in Kohler. Here Chef Will learned the ancient skills and techniques from local industry leaders. His passion for learning has brought him to teach as a Full-time instructor at Lakeshore Culinary Institute beginning the fall of 2017.
Amanda WeberAmanda Weber
Born and raised in Sheboygan, WI, Amanda developed her passion for cooking at a very young age. By 14 she was a dishwasher at Blackwolf Run Restaurant in Kohler, WI. She describes her first day in the kitchen as “the day the obsession started”. She worked her way through the ranks to become a lead cook by her senior year in high school. She then attended the Culinary Institute of America, in NY. After graduation, Amanda worked in New York for years in restaurants ranging from a casual BBQ joint to fine dining. She returned home to Wisconsin and became the Culinary Event Coordinator and Event Chef for Destination Kohler. It was here she discovered her real passion in teaching about anything culinary.  Along with teaching as an Adjunct Instructor, she has since started her own business offering Personal Chef and Catering services. Her philosophy is, “I am committed to designing and executing memorable events by combining exquisite food with the highest level of customer service “. She will be sharing how you can take your Culinary degree to the next level!
